Nose

The nose is expressive, marked by morello cherry and toasted notes.

Palate

The attack on the palate is supple, evolving with a beautiful structure with greedy and crunchy tannins. The finish is long and marked by black fruits.

Growing Conditions

It is through ploughing and manual work (pruning, leaf removal) that we obtain a healthy and resistant plant. The vines are surrounded by a double wild hedge, fruit trees and melliferous flowers, to recreate a balance naturally favorable to prevention.

Harvest

The grapes were harvested manually, at perfect maturity.

Bottling

The wine is bottled at the Château.

Winemaking

The yield is voluntarily controlled : 20hl/ha.
The realization of vat feet, allows the fermentation by the yeasts naturally present on the grapes. The totality was put in new barrels (French oak), for a duration of 15 months and racked every 3 months.
The total sulphur level is low: 60 mg/l (maximum rate authorized in organic viticulture: 100 mg/l) and no other product is added.

Aging

It is a wine to keep: about 15 years.

Appearance

The 2016 vintage, Cuvée Rébecca, has a pretty cherry red color, dark sustained.

Food Pairing

It will go particularly well with red meat in sauce, lamb, roasted poultry.
