Nose
The nose is dominated by lots of pure blackberry, crushed herbs, earth and peppery characteristics.
Palate
The mouth is full bodied, very rich with soft and fine tannins. The finish is fresh with a surprising elegance.
Growing Conditions
The Agly Valley, black slate soil. The Grenache vines are old, around 60 years old
Harvest
We harvest these grapes very late, they are almost overripe to obtain a very smooth texture and a sweet final taste. Our idea is clearly to see how far we can go in a ripasso style wine. We harvest the grapes by hand for the Grenache in small baskets.
Winemaking
We do a selection of the best grapes and then we use a cold soaking fermentation, to obtain more colour and fruit.
Appearance
Dark black-red.

Plates of charcuterie, tapas, paëlla, red meats and game, and.....chocolate cake!
