Nose

Lots of wet gravel, crushed rock, honeysuckle, acacia flower, quince and white currant notes give this wine a character that could easily be mistaken as a serious white Hermitage from the northern Rhone.

Palate

Perhaps it’s the wine’s minerality or power and richness. Fresh, full-throttle flavors.

Growing Conditions

Grapes come from our maritime terroir stony soil from the rolling hills around Canet
Yields : 35 hl/ha

Harvest

Hand harvested in two lots
One lot was picked at 11.5% vol.
The second lot was left on the vine longer to ripen more and then picked lightly overripe to give complexity to the blend.

Winemaking

The wine was macerated on fine lies before racking
The blend of different juices was made before fermentation
10% of the wine underwent a Malolactic fermentation in barrel.

Aging

30% of the wine was fermented in new french barrel and aged with weekly batonnages
70% of the wine was stainless steel fermented, and aged on fine lies for 3 months.

Appearance

A bright mid gold in colour

Would marry beautifully with intensely flavored fish dishes.
