Nose

eucalyptus notes.

Palate

Palate: full, round, rich and well-balanced with soft tannins.
Powerful, concentrated, complex and elegant.

Growing Conditions

Grapes come from a selection of our Aspres terroir terraces vineyard situated at 300 m high.
Soil: Schist marble.
Yield 23 hl/ha

Harvest

Pre-selection of the best grapes in the vineyard.
Green harvest in spring in order to concentrate the crop.
Hand picking in 10 kg boxes and "table de tri" ( table selection) to keep only the intact berries.

Winemaking

Vinification with cold preferment maceration.
The alcoholic fermentation is made in open 500 l barrels, plunging down the cap.

Aging

Draining to barrels and aged in French oak for 11-13 months with weekly "batonnages".
No filtration.

Appearance

Deep red colour.

Côte de boeuf, Boeuf bourgignon, Fondue Bourguignone, Cassoulet, Tartare de boeuf, Chili con carne.
