A special care is given to the vineyard, with pruning adapted to the vine, controlling the yield, high foliage exposure, grass grown between the rows when necessary, thinning out of the leaves for sun exposure and optimum maturity at harvest. We use a sustainable agriculture pattern and are certified HVE & in organic conversion. We have planted hedges in the vineyard so as to improve biodiversity, and we are also members of an association that is ISO 14001 certified.
Picking at full maturity followed by skin contact for around 12 hours. Cold stabilisation and yeasting in stainless steel tanks. Fermentation at low temperatures to allow all the fine aromas to develop. Aged in stainless steel tanks on its lees.
