A special care is given to the vineyard, with pruning adapted to the vine, controlling the yield, high foliage exposure, grass grown between the rows when necessary, thinning out of the leaves for sun exposure and optimum maturity at harvest. The spraying of the vines is done according to a sustainable agriculture environmental-friendly programme. We have planted hedges in the vineyard so as to improve biodiversity. We are also members of an ISO 14001 certified association.
Picked at full maturity followed by skin contact for around 24 hours.
Cold stabilisation and yeasting in stainless steel tanks. Fermentation in new barrels. Aged in barrels on fine lees with regular battonage.
