Aromas of grapefruit, lychee, peach, with some woody notes (vanilla).
Growing Conditions
Ploughing on 2/3 of the area. Thining out of the grapes if necessary. Clay and silt soil with a Red Gravels’ subsoil. Sustained agriculture.
Harvest
Harvest with sorting table.
Winemaking
Low temperature fermentation. 40% maceration on the skins.
Aging
Aging on woody thin lees (5 months). Cellaring: 4 to 5 years.
Appearance
Straw yellow colour.
Food Pairing
Fish cooked in sauce, white meat, asparagus and cheese.
