Future wines are vinified with a lot of selection work, thus the juices
from each municipality are set apart.
In fact, this makes it possible to best express the potential of each
terroir whether for reds or whites. The volume of the winery in the
cellar has been studied for this. Red wines are vinified in Bordeaux,
but with great attention paid to post-fermentation maceration to obtain
supple wines and malolactic fermentation in order to stabilize the
color and structure as well as possible.
