Nose

The nose combines lively red fruit aromas (blackcurrant, cherry) with a subtle touch of vanilla.

Palate

Well-balanced on the palate, with great maturity of flavour and a tannic structure which is dense yet silky-smooth.

Growing Conditions

Vin de Pays de l'Aude is a local PGI and one of the Vins de Pays d'Oc. This is a region that sees sharp climate variations between the ocean, the mountains and the sea, producing a wide variety of wines. It also boasts such historic sites as the City of Carcassonne, the Minervois region and the Corbières mountains with ancient rocks that give the wines a characteristic mineral character.

Winemaking

Vinification takes place in temperature-controlled vats. After a short, prefermentation, maceration, the fermentation takes place a very quickly (over 4 or 5 days), and the wines are then immediately run off. This technique enables the richness and generosity of the Cabernet grapes to be fully expressed.

Appearance

A classic Cabernet Sauvignon with a resplendent purple robe.

Food Pairing

A delicious partner for red meats, barbecues and soft cheeses. Best served young.
