Winemaking
The grapes are picked when perfectly ripe, then de-stemmed (separated from the stems) and lightly crushed. Maceration is carried out in different vats in temperature-controlled conditions that are adapted to the type of grape. Maceration lasts between 15 days and 3 weeks. The running-off is decided upon after inspection tasting, when a gustatory balance has been reached.
Aging
Aging in oak barrels for 6 to 12 months.
