Growing Conditions
- TYPE OF SOIL : Predominantly clay and silt on the hillsides and valleys of the Aude region.
Winemaking
The healthy, crushed and destemmed harvest is vinified in the traditional manner. Fermentation and maceration take place at a controlled temperature, with maceration for approximately one week. Final blend integrates oaky merlot, giving roasted and vanilla hints.
Appearance
Deep brilliant raspberry colour, with purple rim.
Food Pairing
Ready to drink now, this wine is best enjoyed at room temperature (18°C) to accompany a meal outside, a platter of charcuterie meats, grilled meats or a pasta meal. You can also serve it more fresh for aperitif.
