Nose

Expressive and fruity, it offers up black plum, blackberry and strong liquorice notes. When swirled, it develops currant jelly flavours with a hint of black pepper.

Palate

Wonderfully round with ripe fruit, its richness and fruitiness on the palate has hints of blackberry pie and catechu, with a finish displaying stewed plum, blackcurrant and pepper notes.

Growing Conditions

The hillsides of the Aude, exposed to the hot and dry Mediterranean climate, produce delicious wines rich in fruit. Primarily clay and silt on the hillsides and valleys of the Aude.

Winemaking

Traditional vinification of a healthy harvest, de-stemmed and pressed. Fermentation and maceration at a controlled temperature. Maceration lasting approximately a week.

Appearance

Dense and bright raspberry.

Food Pairing

To be drunk from now at 16°C, with a platter of deli meats (e.g. goose rillettes or roast chicken), grilled meat (such as duck breast skewers) and other simple fare to share among friends.
