Harvest

The three Merlot plots and the single Cabernet Franc plot dedicated to the production of Anna are situated on the north face of Saint Emilion’s clay-limestone plateau. They are tended to with incredible diligence and care (de-budding, leaf pulling, green harvesting etc.) in order to obtain grapes of the very best quality. Harvesting takes place a week later than for the Clos Dubreuil plots and is done by hand, using small baskets.

Winemaking

The vinification process begins with a 10-day cold pre-fermentation of whole grapes, followed by a weeklong fermentation at around 24˚C.

Aging

After 6 to 8 weeks of vinification, the wine is transferred to barrels for the malo-lactic fermentation before being aged for 20 months in French oak barrels.
