Nose
Delicate and finenose with lots of fruit.
Palate
Blackcurrant, spiced-cherry, pine and licorice aromas with minerality and freshness.
Growing Conditions
The spring 2018 has been very rainy but very hot during summer, so the grapes were of very good quality but we lost some yield because of mildew due to humidity.
Harvest
The harvest of 2018 vintage went on really well with nice weather conditions.
Bottling
The bottling takes place at château Doyac, it is made by a company that comes with its own truck. It was made during the month of June 2019.
Winemaking
The winemaking is with no intrants at all in the cellar as we are in biodynamic agriculture. We made our own leaven 3 days before harvest.
Aging
The aging of the 2018 vintage was made in barrels and also amphorae during one year. They have the same oxygen exchange as barrels but not the wooden aroma.
Appearance
Black color, rather deep.
Food Pairing
Good pairing with red meat and also white meat.
