No fining, no filtration. Low SO2 content (between 35 and 45 mg/L)
Fermentation with native yeasts. Vinified and aged in raw concrete vats.
Aged in French oak barrels (Berthomieu) between 6 and 10 months. Never new barrels.
Chocolate cake, grilled red meat and duck breast.
