Nose
The bouquet is powerful with citrus scents of grapefruit, bergamot and mandarin orange. Mango and passion fruit are in there too, set off delicately by oaked hints of vanilla and fresh spices such as cardamom, along with vegetal aromas of broom and fresh mint.
Palate
Freshness dominate on the palate, but the attack is powerful and rounded, harmoniously balanced between torrefaction aromas and a variety of fruit flavours, with the slightest hint of carbonic gas leading into vivacity that is characteristic of the vintage and alingering finish somewhere between gentle warmth and tangy freshness.

Cold must settling : 8 degrees in small, thermo regulated stainless steel vats
Alocoholic fermentation at 16.5 degrees in barrels : 50 % new and 50% used once previously.
Aging
100 % of the production in French oak barrels with mild toast : 50% new and 50% used once previoulsy.
Over fine lees, with stirring, during 8 months.
