Growing Conditions
Clay-limestone plateaus and hillsides
Bordeaux pruning , reasoned work in order to respect the environment as much as possible and to promote the expression of an exceptional terroir, one-sided leaf removal.
Harvest
Mechanical, carried out at the fullest maturity. Complete destemming with mechanical and manual sorting.
Winemaking
Separated according to the origin of the plots, the age of the vine, and the grape variety. Vinification in temperature-controlled stainless steel vats. Maceration with submerged marc, from 15 to 30 days depending on the quality of the grapes. Fermentation between 15°C and 27°C. Pneumatic pressing.
Aging
18 months including 12 months in French oak barrels, 20% to 30% new depending on the vintage.
Appearance
Presents itself with a deep purple color
