Soils : clay-sandy
Bottled at the winery
Cold maceration before fermentation for 3 to 5 days at around 8°C to extract color compounds and fruit aromas.
Then, warm maceration after alcoholic fermentation for 5 to 8 days at about 29°C to extract tannin compounds.
Fine dark crimson colour.
It can be enjoyed today with grilled ribeye steak, leg of lamb, duck breast, or hard cheeses such as Basque sheep’s cheese.
