A very great classic, fine and delicate.

Sulfur is one of the antioxidants in wine, naturally occurring in grapes. Not adding sulfites, forces us to always control the atmosphere around the juice of grapes and then the wine. For example, inerting tanks and pipes using CO2 gas naturally produced by fermentation. From this process came the idea to call this wine "Atmosphère".

It is one of the very rare white wines from Côtes de Bourg, aged 4 months in lined concrete vats and barrels, with stirring of the lees every weeks.

It is a cuvée extracted from the vines that Christophe CHETY acquired in 1999. It is the rebirth of a small vintage by its size but of great notoriety. This wine is aged 80% in French oak barrels. It has exceptional maturity and complexity. It will develop great aromas of aging.

It is the emblematic cuvée of our family, harmonious and balanced, aged 12 months in French oak barrels.

We aged this wine for 408 days in 140 liters clay "Amphorae" turned by hand in the south of France. The choice of this aging process is the love of the clay pottery that was transmitted to us by our mother. The natural origin of the material and the neutrality of the terracotta respects the purity of the fruit and the expression of the terroir and finally an extremely natural aging process without any "violence".

Château Jean de la Monge is a property acquired by Isabelle CHETY in 2015. After being harvested by hand, the Merlot and Malbec berries were scraped, then delicately introduced into 12 open barrels of french new oak wood. They were sampled every 8 hours during fermentation and maceration, always in the presence of a musical background, then aged in the same barrels for 14 months. On June 9, 2018, we buried 600 bottles of the 2015 and 2016 vintages for a well-deserved rest in the heart of its soil at 3 meters deep.
