Nose

Winemaking

The powerful Bordeaux Haut Medoc from France is a cuvée, made from the grape varieties Cabernet Sauvignon and Merlot. When perfectly ripe, the grapes for the Bordeaux Haut Medoc are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the hand harvest, the grapes arrive quickly at the winery. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks and small wood at controlled temperatures. The vinification is followed by a maturation on the fine lees for several months before the wine is finally drawn off.

Appearance

In the glass, the Bordeaux Haut Medoc of Chateau Lestage Simon presents a dense purple color. After the first swirl, this red wine reveals a high density and fullness, which shows in strong church windows at the edge of the glass.

Food Pairing

It is perfect as an accompaniment to braised chicken in red wine, roast calf's liver with apples, onions and balsamic vinegar sauce or duck breast with sugar snap peas.
