Vinification in cement vats.
I like balanced wines where the fruit is very present, easy to pair with French cuisine. I harvest the grapes at maturity in order to obtain supple and elegant wines, with aromas of black fruits. I age them partly in barrels to develop spicy and toasted notes and partly in vats to preserve their freshness.
