The harvest is sorted and scraped.

Winemaking

Fermentations are done in stainless steel tanks for 6 to 10 days. Vatting lasts 3 to 4 weeks in order to extract the full potential of the terroir.

Aging

12 to 14 months in French oak barrels with 50% new wood.
