Nose
The nose is very intense, marked by notes of black fruits (blackberry, sour cherry, elderberry). The whole is enhanced by a slight smokiness and some sweet spices.
Palate
On the palate, it is a very rich wine, with a good structure and ripe tannins. Its freshness is particularly pleasant. It is a very elegant wine, full of finesse. Its ageing potential is remarkable. It can be waited for a few years (3 to 4 years), before being enjoyed. A great moment of tasting!
Growing Conditions
2020 was marked by very mild temperatures and contrasting precipitation: heavy spring rainfall was followed by an intense summer drought. The fairly mild winter led to early bud break. The summer heat gave way to cool nights in late August, ideal for ripening grapes.

In stainless-steel temperature controlled tanks with patented cap-breaking system.
Aging
For 12 months in oak barrels (40% new) with racking.
Appearance
Colour is a very dark purple-red, almost black, with purple highlights.
Food Pairing
Oven-roasted suckling lamb, boletus risotto, capon fricassee with truffles (for a special occasion).
Serve between 16°C and 18°C.
