Nose
This wine releases aromas of ripe black fruit from the very first taste. After swirling, the aromatic complexity reveals savoury notes of spice and vanilla.
Palate
On the mouth, this wine is round. Fruity aromatic complexity is combined with tertiary aromas from barrel ageing, expressing empyreumatic notes of caramel and roasting. The tannins are silky and smooth. The beautiful aromatic complexity gives way to a long, spicy finish, with a subtle taste of liquorice.
Growing Conditions
For this blend, a meticulous plot selection is carried out to choose the best grapes.
After a 2017 vintage marked by frost, the fear of a similar year is very real. The winter was cool and rainy, resulting in a fairly late budbreak. Unfortunately, a wet spring led to high pressure from cryptogamatic diseases. The late summer helped to clean up the vineyards, with dry, sunny weather. Showers fell in August, allowing the grapes to finish maturing. September was dry and sunny, with wide temperature variations favourable to the synthesis of anthocyanins and the degradation of vegetal notes in the wines.
Our Merlot is expressive, with silky tannins and aromas of ripe cherry. Our Cabernet Franc is also a great success, benefiting from a fine late season that enabled them to be harvested at perfect ripeness.
Harvest
The yield is reduced to 30 hectolitres per hectare and the grapes are harvested by hand to preserve their quality.
After harvesting, the grapes undergo two sortings: one on a vibrating table and the other using a densimetric bath.
Winemaking
100% integral vinification. A long maceration lasting for 3 to 5 weeks is followed by regular punching down of the cap. This technique gently extracts the aromas, colour and tannins from the grapes. Once alcoholic fermentation is complete, malolactic fermentation takes place in new French oak barrels.
During a final tasting, we select the highest-quality barrels that will make up this unique and privileged cuvée.
Aging
Aging lasts for 24 months in new French oak barrels. The tertiary aromas develop and evolve thanks to the barrel's natural micro-oxygenation process.
Appearance
Of a deep, intense crimson red
Food Pairing
This wine can be enjoyed now, but aeration is recommended. The complex structure gives this wine the potential to be kept for several years, so it will be just as enjoyable to drink.
