Palate

The attack is supple and frank. The tannins, with their fine and dense structure, contribute to a beautiful volume in the mouth. It is a balanced, elegant wine, full of freshness and finesse.

Growing Conditions

Optimal weather conditions and crucial stages successfully completed. Indeed, flowering, fruit set, and ripening took place in ideal conditions with sunny days and cool nights overall. The months of May, June, and July 2015 were historically hot and dry. The water stress (the vine's reaction to a lack of water in the soil), so important for stopping vine growth, occurred early in July, generating a magnificent veraison in early August. The wetter and cooler month of August allowed the vines to complete their growth in the best conditions. The weather conditions allowed us to harvest perfectly healthy and ripe grapes.

Sandy-loam with iron dross (or iron oxide) in the subsoil. Cultivation: No use of pesticides, herbicides or chemical fertilizers. We sow green manures (cereals and legumes) between the rows in autumn. In addition, to promote biodiversity, honey plants (for bees) are also sown in spring. All green work is done by hand.

Harvest

50 hectoliters/hectare.

Winemaking

he grapes are sorted manually, without excess, then put in vats in our completely renovated vat room. Fermentation is done with indigenous yeasts (the natural yeasts existing on the grapes), without extensive extraction, at controlled temperatures (25°-26°). The aromas infuse gradually, the structure is built gently and we adjust it during the post-fermentation maceration period. Malolactic fermentation follows.

Aging

Aged for 18 months, 30% of which in new fine grain barrels, medium or gentle toasting.

Appearance

Intense ruby ​​color.
