A brief history
Located at the foot of the coast to the south of the medieval village of Saint-Emilion, the terroir of Château Canon La Gaffelière is made up of clay-limestone and clay-sandy soils, very filtering, particularly receptive to heat.
Due to the nature of the soils, the grape variety presents an atypical structure with regard to the appellation, characterized by a perfect balance between Merlot and Cabernet. On this terroir, where maturation takes place very early, the Cabernets flourish remarkably, bringing to the opulence of the Merlot a power and an aromatic complexity which form the basis of the natural elegance and finesse of the wines of Canon La Gaffelière.
Extending the plot management, the reception structure of the winery offers the possibility of vinifying perfectly homogeneous batches. The different phases of the vinification take place slowly, without excessive temperature rise, thus expressing the best of the harvest. The aging, carried out on fine lees, brings out the intrinsic qualities of the wine by offering each entity the benefit of individual treatment. Handling and interventions are drastically reduced, adapted to the typicity of each vintage.
