Château Shuette

AURUM is Latin for gold. We chose this name because of the golden hue of the wine. A defining characteristic that distinguishes it from a typical Bordeaux white wine. This Orange wine was made by macerating the Sémillion with its skins for 4 days and then ageing the wine on the fine lees for 7 months.

SANGUIS means blood. Claret is the oldest style of Bordeaux red wine and it has been shipped to England for hundreds of years. In the east-end of London gangsters would say “He spilt some claret” referring to blood after the vibrant red colour of the wine style. Demonstrating just how ingrained and important this kind of wine is in England. We just hope you don’t spill a drop of the excellent claret.

NOVAS means new. This refers to a new style of wine created by working with spontaneous fermentation. Instead of all the natural sugars being transformed into alcohol, we were left with residual sugar in the wine, making an off-dry Claret. Somehow the yeast knew best and we were left with a balanced wine with great mouthfeel and bursting ripe fruit flavours.​ It’s very unlikely nature will ever recreate this wine for us. Get it whilst you can.

The heart and soul of our winemaking in 2020 was ANIMA, with 8,500 bottles produced of this classic Bordeaux style red wine. It is a great representation of our land and classic winemaking. Therefore we call it Anima, or in English, ‘Soul’. Oak barrel ageing for 18 months has integrated the rich complexity into this wine. Ready to drink now, it will easily age well for the next 5 years.

RADIX means roots. The foundation from which everything else grows. We will always make a classic Bordeaux red wine that is matured in new oak barrels. It’s a classic for a reason. Radix is a modern classic, taking the best of heritage Bordeaux wine making and mixing it with organic natural wine making principles. This kind of wine is extremely hard to find from a natural winery.
